You don't exactly expect to find a line-fresh seafood restaurant in the desert, but that's just what has happened at Pacifica. This breezily modern Palm Desert destination is one of the hottest tickets in the upscale resort community, drawing celebrities such as Samuel Jackson, Kurt Russell and Goldie Hawn, and golf and baseball legends, many of whom live nearby. Managing Partner Mitch Epstein relocated from Las Vegas to help open the restaurant, nestled atop a blue-chip retail development [The Gardens on El Paseo]. 'We're going on our seventh year,' says Epstein, whose cell phone never seems to stop ringing with calls from restaurant regulars. Epstein treats each of them as a VIP.
